Marcus’ Recipes from our last session

Chili John’s Chili Chocolate Sauce

….notorious but not feared…
 

 

Spice Mixture
1 teaspoon cayenne pepper
1 teaspoon white pepper
1 teaspoon black pepper
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon onion powder
1 teaspoon garlic powder

And other ingredients…

Corn or sunflower oil
1 can of blended tomato
200 ml vegetable broth
1/2 good beer (optional)
1/2 cup strong coffee or 1 double shot espresso
salt
2 finely chopped jalapenos
2 finely chopped chipotle chillies
300 g of dark chocolate

How to do it …

Mix the spices in a bowl
In a cast iron pot heat the oil. Full fire! 1 tablespoon of the spice mixture met in the Mixing. Fry for about 30 seconds.

Add tomato, broth, beer and coffee. Drink rest of the beer. Season with jalapenos, salt and chipotle-chillies. Let the sauce simmer for a minimum 30 minutes.

Add the chocolate. Do not use it all at once as the taste dependents on the cocoa percentage in the chocolate. The chocolate is meant to add taste but also to smooth the sause. When the chocolate has melted the sauce is finished. Check your seasoning. If needed add spice mixture, salt and/or extra chili.

Traditional Danish Able Pie

For applesauce:
10-12 apples
3 tablespoons sugar
75 ml of water
vanilla

350 grams of bread crumbs.
Available ready-made (Look for Struer Æblekagerasp) Any other bread crum woul do as long as it is sweet. If you can’t find any ready-made do a mixture yourself. Sauté a mixture of plain bread crumbs (250 g) and add crushed macaroons (100 g).
Ribs or rowan jelly
500 ml double cream

How to do it …

Peel the apples and cut them into quarters. Add water and sugar and grains from a vanilla pod. Vanilla sugar can be used with genuine from Tahiti is the best! Boil for apple sauce over low heat. When apples are turned to mush is æblemosen finished. Adjust the flavor with a little sugar and cook until done. Set bog to cool.

Find a nice bowl. Cover the bottom with breadcrumbs about 5 cm thickness. Add a layer of applesauce about 10 cm thickness. Put a few blobs of jelly on the apple sauce. Cover with breadcrumbs. Add next layer applesauce and jelly. Cover with breadcrumbs. Whip the cream.  Cover the last layer of bread crump with whipped cream. Garnish with jelly.

Serve the able pie with a nice cup of coffee, able jack and Dolly Parton on the radio …
